The start of Phil’s career
Phil started working for us at the age of 15 straight after leaving school. For 20 years, Phil enjoyed working in our Fisher Street store and initially undertook a time-served apprenticeship until he became a fully-qualified butcher.

Where is he now?
Highly skilled and knowledgeable, Phil has been working at our Rosehill foodstore for about five years now. He prepares the joints of meat which involves boning, trimming and rolling ready for our butchery counters. Every morning Phil’s first task of the day is to set up the butchery counter display to ensure the quality and pricing of our products are clearly and attractively shown to customers. The display is updated constantly throughout opening hours and Phil has to oversee this.
Our team, including Phil, also prepare the cuts of meat and products for our other two stores, so they’re always on the go.
Phil’s duty is to supervise and ensure that other butchery counter staff are kept busy and on-task. Managing stock levels is a key task and Phil has to regulate product preparation to maintain levels across our three stores. He also ensures that health and hygiene practices are adhered to at all times.
For advice on cuts of meat, portion sizes and any type of butchery advice, Phil is always on-hand and we always encourage our customers to ask for help.
